Your dataLayer code is working assuming you've copied the provided code directly, it's just that it's not visible in web GTM preview as you are used to due to Shopify technical limitations. The warning about pixel not being subscribed to events is due to there being no explicit subscription in the snippet provided to you, the part with analytics.subscribe(...) can be found in the downloaded java script. You can ignore the warning 3. Hard to comment on webhooks specifically, but in general you need to send them to a correct endpoint, such that you have to configure in your server container to claim those webhooks.
