JSON-LD for SEO is not just an SEO app, it’s a fundamental acknowledgement your theme’s structured data code is at best mediocre, and to be blunt, it's probably defective or outdated. The primary developer (Ilana) is a rock star. Sure, you can engineer this yourself, but can you sleep at night knowing Google can and will change the specs at any time. And they have and they do.
